These magical cookie bars are packed full of all the things my family loves, Oreos, mini chocolate chips, M&M's candy, and loads of rainbow sprinkles. Chewy, crunchy, and just melt in your mouth goodness all around.
I am such a classic lady when it comes to my treats. In my opinion, you can't beat a classic fresh baked chocolate chip cookie. I come from a long line of classic cookie lovers. I always think back on a story my dad told us as kids. When he was a boy growing up on a ranch in rural Wyoming, he rode the school bus home from school everyday. One day he was riding the bus and the windows were down and about a mile from home he swears to this day that he smelled fresh chocolate chip cookies baking. Sure enough, when he walks up the long driveway home and opens the door there is his mom baking cookies in the kitchen! What makes these cookie bars magic is the melted butter in the dough. I've found that melting the butter gives them a more soft and flaky texture. Also, the fun variety of mix-ins like M&M's, mini chocolate chips, loads of sprinkles, and oreo pieces. Lastly, the key to these bars is getting the right bake. you cannot over bake them or they are too dry. I underbake mine just a bit. I found that 15 minutes of bake time gives them the perfect chewy texture. Remember that every oven is different so you may have to play with them a bit.
I just made a batch of these to take home for my entire family to enjoy! They were very popular and I received comments on the mix-ins being everyone's favorite and the texture!
Unicorn Bars
Ingredients
2 (16 Tbsp) sticks of unsalted butter melted
1 cup granulated sugar
½ cup packed brown sugar
2 tsp of vanilla
2 eggs
3 cups All purpose flour
1 tsp baking soda
1 tsp salt
1 ¼ cup M&M’s candies
1 cup crushed oreos
3/4 cup mini semi sweet chocolate chips
¼ cup sprinkles
Directions
Preheat the oven to 350 degrees F.
Melt the butter on the stove top or in the microwave and set aside.
Add 1 cup granulated sugar, ½ cup packed brown sugar, 2 tsp of vanilla, and 2 eggs, into a mixer and cream together until light and fluffy.
Add 3 cups All purpose flour, 1 tsp baking soda, and 1 tsp salt, and mix in a separate bowl.
Add the dry ingredients to the egg mixture until combined.
Add in 1 cup M&M’s candies (reserve ¼ cup for the top of the bars), 1 cup crushed oreos, ½ cup mini semi-sweet chocolate chips (reserve ¼ cup for top of bars), and ¼ cup sprinkles stir until the dough is combined.
Sprinkle the remaining ¼ cup of M&M’s and chocolate chips on top of the bars and then add a few sprinkles.
Bake for 15 minutes.
Transfer the bars to a wire cooling rack.
