I love a good monster cookie. The combination of peanut butter, chocolate, and oats, make these cookies a huge hit in my family. I am also very picky about monster cookies. The perfect monster cookie is chewy, never dry, has the right ratio of chocolate to oats, and is always a bit underbaked. This recipe has it all and also how cute are these?!
Adding peanut butter to cookies can often dry them out. I have found that the best peanut butter to bake with is a premixed creamy peanut butter like Jif. I regularly eat organic peanut butter but I have found that it often separates or is harder to completely mix which makes its unpredictable when used for baking. Jif premixed peanut butter has the right ratio if oil to peanuts and just provides a more even bake.
Lastly, it's so important is to make sure to have enough chocolate chips and M&M's in your monster cookies! I truly feel that when you bite into a monster cookie every bite must contain a bit of M&M. There is nothing worse than a dry monster cookie without enough chocolate. Am I right?
To make these more festive for fall, I added candy eyes to each cookie. This is such a cute and easy way to make them look like monsters! I love how each cookies has its own personality, some of the eyes melt and each eye moves into its own position while baking making each one unique.

Monster Cookies
Ingredients
1 ¼ cup melted butter
1 cup creamy peanut butter (don’t use organic peanut butter it dries the cookies out try using a premixed like Jif)
1 cup brown sugar
1 cup white sugar
2 tsp vanilla
½ cup milk
2 eggs
2 ½ cups all purpose flour
2 ½ cup quick oats
1 tsp baking soda
½ tsp salt
1 1/2 cup M&M’s candy
1 ½ cup semi sweet chocolate chips
1 package of candy eyes
Directions
Preheat the oven to 350 degrees F.
Cream 1 ¼ cup melted butter and 1 cup of peanut butter together and then mix in 1 cup of brown sugar, and 1 cup white sugar.
Mix in 2 eggs, ½ cup of milk, and 1 tsp vanilla extract.
In a separate bowl stir together 2 ½ cups of flour, 2 ½ cups quick oats, 1 tsp of baking soda, and ½ tsp of salt.
Add the dry mixture to the mixer on low, mix until combined.
Add 1 ½ cups of M&M’s and 1 ½ cups of semi sweet chocolate chips to the dough and mix just until combined.
With a large cookie scoop form dough balls and place them on a parchment paper covered cookie sheet. Gently press three candy eyes into each dough ball.
Bake for 12 minutes.

This recipe makes 4 dozen cookies depending on the size of cookie scoop you use. These cookies do not need to be refrigerated before baking so if you make the dough ahead of time take it out of the fridge 30 minutes before you bake it so the dough softens a bit. When placing the eyes on the dough balls, press them gently into the dough or they may disappear into the cookies while baking.
A few more things to note about getting these babies to bake perfectly, always cream your butter, peanut butter, and sugars together. Mix them until they are lighter in color and fluffy. This really helps with the cookies texture! Also, every oven is different but, when I say to underbake these a bit I mean it. The recipe says 12 minutes of bake time and for my oven and the larger size of these cookies that is perfect. Everyone's oven is different. You will want them to be just starting to brown around the edges and if you are making them a but smaller try baking for 10 minutes instead of 12! This will ensure they are not dry and that they remain chewy.
