Strawberries and Cream Rice Krispies Treats

The the perfect Rice Krispies treats with a fresh strawberry flavor and creamy white chocolate top! Such an easy recipe and a fun summery take on this traditional treat.

There isn't a single fruit on this planet that reminds me more of summer than fresh strawberries. Strawberries are my favorite fruit and when fresh, they can be as sweet as candy. There is also nothing better than biting into a fresh, plump, and juicy, strawberry.


Growing up, we had a strawberry farm just a few miles down the road from us. Mid July, when the berries were finally ripe my mom would load us up in our teal Ford Windstar and we would head on down the road to go pick some. It was always so fun to find a good plant that had so many bright red berried that you could fill a pint sized container! There really was nothing like these fresh Flathead grown strawberries. My sisters and I must have been a sight to behold after an afternoon of berry picking with our bright red fingers and lips!


When I had originally dreamed up these treats I thought about my berry picking days and really wanted these treats to taste like real strawberry. By adding freeze dried berry powder, I was amazed at how much these tasted like fresh strawberry. So much so, that the first recipe take had too much strawberry flavor! I think on this second take I finally got it just right. To balance out the tart from the berries, I added a white chocolate drizzle on top.


I LOVE Rice Krispies treats! They are so classic, versatile, and timeless. Rice Krispies treats also just as good today as they were when I was a kid. One of my absolute favorite variations of this treat are scotcheroos. Stay tuned for my recipe coming soon. The best part about this iconic treat is that they come together in about 20 minutes making them one of the easiest desserts to make for a crowd. Strawberries and Cream Rice Krispies Treats


Ingredients


10 cups Rice Krispie Cereal

8 Tbsp (1 stick)

16 oz bag of  mini marshmallows

½ tsp pure vanilla extract

2 Tbsp + 2 tsp of ground freeze dried strawberries! (About ½ oz)

1 cup melted vanilla candy coating

½ tsp vegetable oil



Directions


  1. Add 10 cups of Rice Krispies to a large bowl.

  2. Grease a 9x13 pan.

  3. Grind ½ oz of freeze dried strawberries to a powder.

  4. In a saucepan over medium-low heat melt 16 oz of mini marshmallows with 1 stick (8 Tbsp) of butter. Stir continuously until fully melted then add ½ tsp vanilla and 2 Tbsp + 2 tsp of strawberry powder and mix well.

  5. Dump the marshmallow mix onto the cereal and stir well.

  6. Press the rice krispies firmly into the pan, and let cool.

  7. At 40% power in the microwave for 2 minutes, melt 1 cup of white chocolate. Stir every 15 seconds to make sure it doesn't get too hot or burn.

  8. Drizzle the white chocolate over the top of the Rice Krispies and sprinkle a bit more strawberry powder on top, let the chocolate set, and enjoy!





Place the treats in an airtight container. Rice Krispie treats keep longer in the refrigerator and can be frozen. Pro tip, spray cooking spray onto the palms of your hands before you press the bars into the 9x13 pan to prevent the treats from sticking to your hands!
