Summer Sunset Rice Krispie Treats

Rice Krispie treats are the ultimate summer snack! These tri-colored treats are so easy to make and certain to be a hit at your next BBQ or picnic. What's not to love?

Rice Krispie treats are such an iconic and nostalgic treat for me. I grew up eating these often and have always loved them so much. Let's face it, some of the most simple treats are the most memorable. I am always finding fun ways to make these treats a bit different than the OG and the beautiful colors in these bars do not disappoint. What treat is nostalgic for you?


The fun part about these is that they are so versatile. For the 4th of July you can make them red, white, and blue, or, you can add some oreo pieces or mini chocolate chips. I even like to add in some whole marshmallows when I make the originals because I love the extra texture and chewiness they add to every bite.


A couple things to note when you make this recipe. First, spray the palms of your hands with cooking spray or rub in a bit of butter, this helps the treats to not stick to your hands! Second, you can make these in the microwave too. Just cook the butter and marshmallows on 4% power for about 5 minutes, slowly stirring halfway!


Summer Sunset Rice Krispie Treats


Ingredients


15 oz of mini marshmallows split into 3 (5 oz each)

9 cups of rice krispies cereal split in 3 (3 cups each)

9 Tbsp butter split into 3 (3 Tbsp each)

Red, orange, and yellow, food coloring



Instructions


  1. In a mixing bowl add 3 cups of rice krispies cereal.

  2. In a saucepan add 3 Tbsp of butter and ⅓ of the marshmallows (5 oz by weight). On medium low, stir the marshmallows and butter together until all the marshmallows are melted. Add 3 drops of yellow food coloring to the pan and stir to combine.

  3. Grease a 9x13 pan. 

  4. Add the yellow melted marshmallow mix to the pan and press evenly into the bottom. I coat my hands in cooking spray or butter to prevent sticking. 

  5. Repeat this process 2 more times for the orange and red food dye. You will end up with a perfect 3 layered rice krispies treat that is pretty and delicious!

  6. Cut into whatever sized squares you want and enjoy!
