The PERFECT crisp, soft, chewy, peanut butter cookies, dipped in smooth semi-sweet chocolate!
This recipe has been tried and tested so many times. I had a vision of what the best peanut butter cookie should be and everytime I tried, it just wasn't hitting the mark. I wanted a cookies that was crisp on the outside, yet soft and chewy on the inside. Not flat but dense when you bite into it. It needed to be memorable. These cookies are just that!
Chocolate Dipped Peanut Butter Cookies
Ingredients
2 1/2 cups of all purpose flour
1 tsp baking soda
1/2 tsp salt
1 cup brown sugar
1/2 cup of granulated sugar
1 cup room temp unsalted butter
1 cup peanut butter
2 eggs
1 tsp vanilla extract
2 cups semi sweet chocolate chips melted
2 tsp canola oil
Instructions
Preheat the oven to 350 degrees F.
In a mixer with the paddle attachment whip 1 cup butter until creamy, add in 1 cup brown sugar and 1/2 cup granulated sugar and cream together.
Add 1 cup peanut butter, 1 tsp of vanilla, and 2 eggs and cream together.
Mix in 2 1/2 cups of flour, 1/2 tsp of salt, and 1 tsp of baking soda. Refrigerate for at least 2 hours to prevent spreading.
Using a medium sized cookie scoop place the dough on 3 parchment lined cookie sheets and bake for 13 minutes.
Let them cool completely. Melt the semi sweet chocolate chips and stir in 1 tsp of canola oil.
Dip the cookies half way into the chocolate, shake off the excess, and let them set! I placed mine in the fridge because I am too impatient to wait for them to set.

This recipe has been in the making for some time now. Some recipes are easy to create and some take time. I was having a problem with these cookies turning out dry and I realized the culprit was the type and amount of peanut butter! Creamy Jif or an off brand of creamy peanut butter works best for this recipe. Organic or natural peanut butter made them dry and they didn't turn out as well.
A hint for this recipe is to make sure that you refrigerate the dough. If you don't, they will spread and not turn out as well. Personally, I like a chewy cookie but if your preference is crispy then bake them 1-2 minutes longer.
I am interested, for this recipe I preferred the cookies dipped in chocolate but I made some by just drizzling the chocolate on top. Experiment and let me know what you like best! I'd love to know your preference.
