Oatmeal Craisin Spice Cookies

When you feel that chill in the air, I hope you to think of these oatmeal craisin spice cookies. They are the perfect comfort cookie. These cookies are packed with flavor from the ginger, nutmeg, cloves, and cinnamon, and they are chewy and crisp but not too sweet!

Who doesn't love a classic? I grew up eating my mothers delicious oatmeal raisin cookies. This is my take on the traditional. How is my recipe different? I have added dried cranberries instead of raisins which makes them a bit more tarte and I've upped my spice game. I added a lot of fresh ground ginger, cinnamon, nutmeg, and cloves. Each bite reminding me of snuggling under a warm blanket with a book.


Let's talk about texture for a minute. In my opinion, texture is one of the most important elements of a cookie. These oatmeal cookies are chewy and yet when you first bite into them they have the perfect crisp from the sugar coating! Delicious!


Mix ins? As I've said before, I am not a fan of nuts in most of my cookies (just personal preference) however, I know many of you are and there is nothing wrong with adding in 3/4 cup of chopped walnuts to this recipe! Half of my family prefers the nuts and the other half don't. For all of you chocolate lovers, you could also add 1 cup of milk, white, or semi sweet chocolate chips to this recipe. Oatmeal Craisin Spice Cookies


Ingredients


1 ½ cup butter softened 

2 eggs

1 ½ cup brown sugar (I made my own by adding 1 ½ cup granulated sugar and 2 Tbsp of molasses to a bowl and mixing well)

1 tsp vanilla

3 cups of all purpose flour

2 ½ cups of whole oats 

1 tsp baking soda 

1 tsp salt

1 tsp ginger

1 tsp cinnamon

½ tsp nutmeg

½ tsp cloves

2 cup of craisins 


Sugar mixture for dough balls


½ cup granulated sugar

1 tsp cinnamon 



Directions


  1. Preheat the oven to 350 degrees F.

  2. In your mixer with the paddle attachment, cream 1 ½ cups of  butter until it's light and fluffy. Then add in the 2 eggs, 1 ½ cup of brown sugar, and 1 tsp of vanilla,  and mix well. 

  3. In a separate bowl add 3 cups of flour, 2 ½ cups of oats, 1 tsp baking soda, 1 tsp salt, 1 tsp ginger, 1 tsp cinnamon, ½ tsp nutmeg, and ½ tsp cloves and mix well.

  4. Add the dry ingredients to the mixer and mix on medium low until fully combined. Add in 2 cups of craisins and mix well.

  5. Add ½ cup of granulated sugar and 1 tsp of cinnamon and mix. Using a medium sized cookie scoop, make your dough balls and roll them into the sugar mixture.

  6. Add the dough balls to a parchment lined baking sheet and bake for 10-12 minutes. 

  7. Enjoy!

Extras!


This recipe makes about 4 dozen cookies if using a medium cookie scoop for measuring the dough. There is also no refrigeration time required prior to baking these. In fact, if you are making the dough ahead of time and do refrigerate it, I would let it sit out on the counter for 30 minutes before forming it into balls.


You can bake these ahead and freeze them in an airtight container or gallon ziplock bag. They will stay fresh for up to 3 months!


Lastly, I always underbake my cookies a bit. I almost always prefer a chewy cookie to a crisp one. If you prefer crisp add a minute to the bake time. Remember that every oven is different. My oven bakes these perfectly in exactly 10 minutes but yours may do better in 12, you'll need to experiment a bit to get them just the way you like them.
