    Chocolate Peppermint Fudge Cookies 


    Ingredients 


    2 (16 Tbsp) sticks of unsalted butter melted 

    1 cup granulated sugar

    ½ cup packed brown sugar

    1 tsp of pure peppermint extract

    2 eggs

    1 cup cocoa powder

    2 ¼ cups All purpose flour

    1 tsp baking soda

    3/4 tsp salt

    1 cup semi-sweet chocolate chips

    1/2 cup Holiday Mint M&M’s chopped, 1/2 whole  

    ¼ cup sprinkles 


    Instructions 


  • Preheat the oven to 350 degrees F.

  • Melt the butter on the stove top or in the microwave and set aside.

  • Add 1 cup granulated sugar, ½ cup packed brown sugar, 1 tsp of peppermint, and 2 eggs, into a mixer with the paddle attachment and cream together until light and fluffy.

  • Add your melted butter and mix until combined.

  • Add 1 cup cocoa powder to the wet ingredients mix slowly until combined.

  • In a separate bowl add 2 ¼ cup flour, 1 tsp baking soda, and ¾ tsp salt and mix.

  • Add the dry ingredients to the egg mixture until combined, don't over mix. 

  • Take half of your M&M's and chop them into pieces.

  • Add in 1 cup chocolate chips, 1 cup M&M’s (chopped pieces and whole), and ¼ cup sprinkles, to the dough just until it's combined.

  • Using a medium cookie scoop add the dough to a parchment lined baking sheet. 

  • Bake for 9-10 minutes.

  • Let the cookies sit on the cookie sheet for 1-2 minutes then transfer the cookies to a wire cooling rack.
